This colorful and delicious vegetable dish can be served to family and friends right from the pan.
Use a cutting board to slice yellow squash into 1/4" wide pieces. Lay the pieces on the bottom of a frying pan. Then slice and chop shallots which add both flavor and color to the dish. Layer them on top of the squash in the pan. Sprinkle shredded carrots on top. Add a bit of salt and pepper. Stir fry with 2 tablespoons of your favorite olive oil for about 4 minutes...until squash is the desired texture.
